Meet the pioneer of contemporary Croatian winemakers, Alen Bibić. His name often comes attached to the famous regional white wine, Debit, that he himself brought back from the realm of table wines, adorning it with newfound respect. Alen obviously did something right when he revived his grandfather’s vineyards which were decimated during the 1990's war, as his revolutionary blends soon made him the first Croatian winemaker to export to the US. His passion and knowledge on wine production, as well as the gourmet magic he creates in tandem with his wife Vesna, were recognized by Anthony Bourdain, resulting in Bibich and Skradin being featured as one of the Croatian highlights on the famous 'No Reservations’.

Tour description


Not only did he revolutionize thinking about the Debit variety, Alen and his family have created a stunning destination winery in the hills just above Skradin, in a bucolic village of Plastovo.

The area is downright magical, set right where the Krka River puts on its best show of canyons, cascading waterfalls before its mouth joins the Adriatic Sea in one fell swoop. For 2,000 years Skradin has drawn visitors and travelers who love nature, music and splendid food and wine. 75 years ago a local vintage Bedrica won the Grand Prix award in Toulouse, France and was declared one of the six best wines in the world!

Today, Alen Bibić and his wife Vesna deliver a world-class wine pairing that has been put in the same realm as Michelin star experiences around the world! Each dish is visually stunning and divine, served with a wine chosen personally by Alen. Depending on the season you'll enjoy tender home-raised veal, free range ducks, pheasant and other poultry together with a medley of organically grown vegetables and herbs from their extensive gardens. All depending on season and their inspiration!

After this unforgettable experience, you can browse the Bibich Winery shop and not only for their finest wines but also for the Bibich cold pressed olive oils, brandies and other Dalmatian delicacies.

  • This tour is fully private and on request only.
  • Tour includes collection from your hotel, villa or private accommodation by our professional English speaking chauffeur in a comfortable luxury sedan car or passenger van as driving on your own is not recommended.
  • Bibich wine cellar offers following programs: 
    From 1 PM - 5 PM (cca 1,5 hours duration), by reservation only: Bibich Wine and Food Pairing - tasting of about 6  tapas style courses perfectly paired with Bibich wines
    From 8 PM (cca 3 hours duration), by reservation only: Bibich Signature Tasting Menu - slow food dinner of about 13 courses paired with best wines Bibich wine cellar has to offer! True foodie heaven!
  • This tour is not recommended for families with children.
  • Kindly note that this experience is not suitable for guests with dietary restrictions!
  • OPTIONAL: We recommend to add tour of Šibenik and visit to its cathedral, UNESCO World Heritage site or guided tour of Skradin and Krka National Park. Available at additional cost.

The 12-hours risotto of Skradin

Skradinski rižot or Skradin risotto is a celebrated dish of this small town that takes hours to prepare; the rich veal stock is slowly simmered over an open fire for 12 hours or more. Now elevated to celebrity status by its feature in Anthony Bourdain's 'No Reservations,' when he was a guest at Bibich winery, the recipe is handed down through generations, together with each family’s secret ingredients. Dating back 200 years, Skradin risotto is typically cooked by men, often before special occasions. The divine finish is a healthy topper of Pag island cheese and a glass of Bibich wine!
